Sucrose, often called sugar, is an organic compound in the disaccharide family of carbohydrates, in that its molecule consists of two monosaccharides, more specifically glucose and fructose.
It occurs as a solid or dissolved in solution at room temperature and atmospheric pressure. Extracted sucrose is used in the food industry, particularly in confectionery and pastry.
Almost fully refined sugar used widely in Europe is called white sugar, sugar containing molasses is called cane sugar.
Cane waste is called pulp and is used as fertilizer or natural organic fuel.
